Our winemaking process is based on maximising the flavours of the fruit we produce and blending to create complexity and interest. We use oak in small amounts to add texture and body, along with malolactic fermentations for our chardonnay based wines. As a former scientist, the process is driven by precise and rigorous measurements.
We work hard to get the fruit into the right place for making wine. This means regular field tests, checking acidity and sugar levels, to help us establish the right time to harvest. In some years we have been known to wait until November to pick our black grapes, to maximise overall ripeness and flavours.
Our winery is small but perfectly formed where we process our wines in inert steel tanks. and utilise oak staves to add character. We monitor the progression of each batch, through regular readings and tastings, to find the right balance in the wine. We store our wines in a purpose built cellar to allow them to age slowly, to develop their true potential.
